Vegetarian Black Bean Omelet Recipe
Ingredients
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1/2 cup diced red bell pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/2 cup black beans, drained and rinsed
- 2 large eggs, beaten
- 2 tablespoons shredded cheese
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Instructions
Heat olive oil in a nonstick skillet over medium heat. Add the onion, bell pepper, garlic powder, and cumin; cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the black beans and cook, stirring occasionally, for an additional 2 minutes.
Add the beaten eggs to the skillet and cook, stirring occasionally, until the eggs are cooked through, about 5 minutes. Sprinkle the cheese, cilantro, and salt and pepper over the omelet. Fold the omelet in half, and cook until the cheese is melted, about 2 minutes.
Transfer the omelet to a plate and serve with your favorite toppings. Enjoy!
